Aim for a moisture content of 16-18% in most applications. Set water activity at 0.55 to 0.60 and Brix at 60 to 70° Brix. In addition, it requires full compliance with the EU maximum residue limits set out in Regulation (EC) No 396/2005. Third-party laboratory verification should also be required on each supply batch.
Country of origin shapes both flavour and supply reliability. French Agen prunes, for example, are considered premium. Yet they carry a significant price premium and volume constraints.
